Recently my friend, Angela, was diagnosed with Celiac Disease. Honestly I don't know a lot about Celiacs but am learning from her and now watching things I eat a bit more closely. I asked Angela for a good recipe for a Halloween treat and she sent me this one (and made a batch, which I'm still waiting on my sample!) It's surprising how many things you can find that are gluten-free, I hope you enjoy!
Gluten-free Halloween Rice Krispies tricks or treats
Ingredients:
3 tbsp margarine
10 oz bag of Jet Puff regular size marshmallows
Gluten-Free Rice Krispies Cereal
Chocolate chips (optional)
Halloween-shaped cookie cutters
Melt 3 tbsp of margarine or butter in medium-large sauce pan on low heat, add 10 oz bag of jet puff regular size marshmallows, stir until melted, remove from heat & stir in 6 cups of gluten free Rice Krispies cereal (I add some choc chips to mine after cereal, it melts in & makes them so much better).
Spray large cookie sheet & a spatula with Pam cooking spray before spreading the treats about an inch thick onto the cookie sheet then, allow to cool
*Hint: always check labeling for your ingredients to make sure they are gluten free as well
After cooled use Halloween shaped cookie cutters to cut treats
Decorate to make them fun & yummy! Use can any candy you wish, with icing or without
